Thai Quinoa Salad

Keeping up with the healthy choices

This is a super healthy salad packed with so much good stuff.  It’s one of my favorite salads, there is just so much tasty flavour to it.  It’s the perfect meal to have in the middle of a hot summer day, especially here in Spain.

 

Ingredients:

1 medium size cup of quinoa

1 carrot, shredded

1/2 red pepper, finely chopped

1/2 red onion, finely chopped

A handful of mixed lettuce leaves

1 cup edamame beans

1/2 cup shredded red cabbage

A handful of cashew nuts

Salad Dressing:

3 tablespoons of Fish Sauce

2 limes, squeezed

1 teaspoon of sesame oil

1/2 cup chopped mint

A small handful of cilantro, chopped

Directions:

Chop all the ingredients accordingly and mix in a large bowl the mixed lettuce leaves, red onion, red pepper, shredded carrot, red cabbage and the quinoa.  In a small bowl, mix all the salad dressing ingredients and then add to the bowl.  When you’ve mixed everything together, add the cashew nuts and the edamame beans then a wedge of lime for presentation or extra flavoring.

This salad contains alot of vitamins and antioxidants, it’s super nutritous.  I like to finish mine off with some sesame seeds to give it some extra pop!  Try it out and let me know your thoughts.
